Roasting vegetables is one of my favorite things to do. $10 stop at the growers market, 20 minutes of prep, 40 minutes of cooking and a plethora of delicious bites. A little olive oil and Cavenderโ€™s All Purpose Greek Seasoning and you have a different taste in every scoop. From the acidic cherry tomatoes to the slightly al dente carrots, your pallet is sure to get itโ€™s fix. You got 30 mins somewhere in your day- rearrange your day if you have to, get up 30-45 mins earlier, go to bed 30-45 mins later. If I can do it, so can you!
