🌮 It's extreme but it's low-carb, dairy-free and healthy so no guilt today! 🙆🏻‍♀️ Butternut Squash Taco Boats with dairy-free Daiya Cheese. . Directions: 1️⃣Cut squash in half, clean out the seeds. Cook on Manuel pressure in my for 8 min. 2️⃣Use a fork to noodle out the squash and set aside. 3️⃣ Grass-fed ground beef cooked with sautéed onions , garlic. 4️⃣ Spices used- garlic, salt, pepper, cayenne, chili, Cajun. 5️⃣ Mix squash into cooked meat and add taco sauce or make it yourself (ask for my recipes). 6️⃣ Fill up squash boats with meat and squash mix, add a few cherry tomatoes on top and add sour cream or yogurt (i used Ricotta) then cheese topping of choice. 7️⃣ Bake at 375 for 15 min and Enjoy. 👌🏻 . . . . . . . . . #fitnessfood

No way....frosé. 🍷 . Getting to spend some time in Miami last week was exactly what the doctor ordered. It was the first non-business related trip Dan and I been on together since Chase was born nearly 10 months ago...not to mention the first time for us to hit the reset button. We slept in, we relaxed, we laid out by the pool and sipped on some drinks, we ate some DELICIOUS food, worked out and walked a lot, and just enjoyed ourselves. ☀️ . As I was walking back to my hotel from the @flywheelmia cycle class, enjoying the sunny day with an matcha in hand ...I realized in that moment that it was the best I had felt, physically and mentally, in probably about a year. . Between the move from Austin to CT (almost exactly a year ago today), to purchasing our second home, to preparing for Chase’s arrival...and then of course the craziness of being new parents while also managing my own business....I was in a constant state of stress without even realizing it. . I feel like that happens to most of us at some point in our lives. That’s when it’s time to step back, figure out your priorities (hint: your health should be ), hit the reset button and do something for yourself. And if you’re a parent, that’s not being selfish. It’s realizing that sometimes you (or you and your partner) need some self-care and time for yourselves, and there’s nothing wrong with that. It actually should be encouraged - because now I feel so much more energized, patient, happy, and productive now that I’m home. Not to mention all of the baby snuggles I’m getting now. Win/win. .
