FREE 1-WEEK MEAL PLAN IN OUR BIO⠀ .⠀ Follow us (@simplyfitsociety) for more⠀ .⠀ By @choosing_balance⠀ .⠀ Pb&j baked oatmeal this morning 😍😍 Haven’t made baked oatmeal in FOREVER and let me tell you- this might be my favorite one yet 🙌🏻 ⠀ -⠀ Late breakfast so I guess it’s technically brunch.. but that won’t stop me from eating lunch in 2 hours 😉 Haha I slept in this morning so I threw everything together + put it in the oven then headed out to an @orangetheory class and had Eli keep an eye on it 💯 When I got back- devoured this slice 😍 I just love slow mornings, a good workout, and a delicious easy breakfast 🤗 It’s a rainy Saturday over here so doing lots of household chores + running errands + wedding stuff on the to do list today! Hope you guys have a wonderful and fun filled Saturday! ❤️ ⠀ -⠀ healthyfood details 👉🏻 Adding this to my blog today as well! Posting the details here too: ⠀ I made my two ingredient Blackberry jam (takes 10 minutes- recipe is on the blog!) yesterday so that was ready to go! You could use fresh berries if you wanted. ⠀ Preheat oven to 400F ⠀ In a bowl, mix 2 cups oats (I used @woodstockfoods) + 1 1/2 cups unsweetened almond milk + 1/4 cup organic Pb (used @yumbutter) + 1/4 cup blackberry jam + 1 egg + 2 tbsp coconut sugar + 1 tbsp cinnamon. -⠀ -Mix everything together. Spray a baking pan or cast iron skillet 🍳so it doesn’t stick. Transfer to the skillet and bake for 35 minutes! Topped with a little more PB and jam 😍 Obsessed is an understatement!

Or, if you don't have enough sauce for the dressing, simply use a good extra virgin olive oil (I like the lemon flavored varieties) with an additional squeeze of citrus.⠀ ~⠀ 1 pound mediumPan-Seared Citrus Shrimp 31/40⠀ 8 cups greens such as arugula spinach, or spring mix⠀ Fruity or lemon-flavored extra virgin olive oil⠀ Juice of 1/2 lemon or 1/2 orange⠀ 1 avocado sliced or diced⠀ 1 shallot minced⠀ 4 ounces toasted sliced almonds⠀ Kosher salt and freshly ground black pepper⠀ .⠀ Instructions:⠀ Prepare the recipe for the Pan-Seared Citrus Shrimp, or gently warm the leftover shrimp. Or, if you prefer, serve the shrimp chilled.⠀ Toss the shrimp with the salad greens in a large bowl. Lightly drizzle with olive oil, and if desired, some of the sauce remaining from the shrimp with a generous squeeze of citrus, and toss lightly to coat. Add the avocado, shallots and sliced almonds and then season with kosher salt and freshly ground black pepper and serve.
