(RECIPE below!) . 💡 Don't you love when science validates what traditional wisdom has told us for ages? It turns out that vinegar of all types (apple cider, white, red wine, etc.) decrease the activity of disaccharidase enzymes. Disaccarideases are digestive enzymes that break down disaccharides into their two constituent sugars. Sucrose, for example, is broken down into fructose and glucose by sucrase, a disaccharidase. . ☝🏼 All vinegars contain acetic acid, which is thought to partly explain its anti-hyperglycemic activity. This effect is important enough and might explain so many of its observed benefits because chronically high blood sugar wrecks pretty much all of your organs! . ⚠️ Just remember: this effect will NOT have an impact on monosaccharides, i.e. pure glucose or pure fructose. High-fructose corn syrup, invert sugar, honey, and fruit is principally monosaccharide and therefore do not need to be broken down by disaccharidases before entering your system, therefore vinegar will likely not affect its digestion. On the other hand, the digestion of complex carbohydrates like starches are exactly what vinegar co-ingestion may suppress. . 🥤 Here's a great recipe for a refreshing apple cider vinegar drink to drink any time! . 1️⃣ 1-2 tablespoons of raw apple cider vinegar 2️⃣ 1 Whole Lime (squeezed) 3️⃣ A pinch of pink himalayan salt 4️⃣ Ice and 600ml water Stir and enjoy! . .
