Just look at this delicate, delicious game bird? Describing the taste of *good* quail can be tricky. Think ‘gamey chicken’ It’s more strongly flavoured than chicken so doesn’t need to be lavished when cooking. Just a bit of oil or butter and salt and pepper – delicious!

Sweet & spicy tofu steaks (Ideal for BBQ) 🌶️ Ingredients: 500g of firm tofu, soy sauce, 2 green onions, cracked black pepper, agave nectar, rice syrup, gochujang, minced garlic, onion powder, apple cider vinegar, potato starch. Method: 1. Rinse the tofu and pat dry with a clean tea towel. Press hard to extract all the water. 2. Cut the tofu block in 8 thick rectangles. 3. In a small bowl, mix: 4 tablespoon of soy sauce, 1 teaspoon of gochujang, 2 tablespoons of minced garlic, 1 teaspoon of onion powder, 1 teaspoon of cracked black pepper, 2 tablespoons of apple cider vinegar, 2 tablespoons of rice syrup, 1 tablespoon of agave nectar, 2 tablespoons of potato starch. 4. Mince the green onions (white and green part) and add them to the bowl. 5. Give it a good mix. Make sure the gochujang is completely dissolved and that the potato starch isn't lumpy. 6. Put the steaks (4/4) in sandwich bags. 7. Divide the marinade evenly into the two bags. Shake it and then massage the tofu to coat evenly. 8. Place in the fridge and let it marinate for at least 1 hour (the longer the better! I usually marinate them for 4 hours). 9. Grill them on bbq (or grill pan), usually 3 to 5 minutes on each side: depends how crispy you like them. Note they will brown quickly because the agave nectar will caramelise. #marinade
