Marinaded overnight with a rub of English mustard then a dry rub mix of coconut sugar, paprika, Devil Dust and fresh ground Laphroaig coffee beans from @ovenbird_coffee . In the grill now with an estimated cook time of 8hrs at 120c. Smoking with hickory chips and regular spritz with pear juice to build up the smokey, caramelized bark.
