Pasta Filo rellena de verduras..coliflor,zanahoria, calabacín amarillo,brócoli con queso de cabra! En fin los vegetales que tengas disponibles. No es complicado solo un poquito de paciencia al trabajar con las hojas de filo. Vegetable Phyllo pie filled with purple coliflower,carrots and brocolli,squash and goat cheese! Promise its easy to put together with some patience working the phyllo dough. It cuts beautifully. Any veggies available are fine. #phyllopie Ingredients: 1 purple cauliflower (it could be any variety, I just like the color) 1 cup diced onion 1 cup broccoli 1 cup diced butternut squash 1 cup diced carrots 4 eggs 1 1/2 cup heavy cream 1 cup parmigiano reggiano cheese 1/2 cup toasted slivered almonds 3 tbsp olive oil 6 tbsp unsalted butter 2 tbsp chicken bouillon powder Dash of nutmeg 1 cup bread crumbs 2 tbsp minced parsley Salt and pepper to taste 6 Phyllo Sheets Directions: Cut the cauliflower, broccoli, mushrooms and squash in a medium dice. (not too small) Steam all together in a steam basket until tender. Add olive oil to a pan and add diced onion. Cook until translucent, add steamed vegetables and season well with salt, pepper and dash of nutmeg. Add 2 tbsp of chicken bouillon powder. In a bowl mix your eggs and heavy cream. Season with salt, pepper and dash of nutmeg. Add vegetables to the egg mixture. Add 1 cup of parmigiano reggiano. Add 1/2 cup almonds. Butter a loaf pan and place a phyllo sheet to cover the entire pan leaving the extra sheet to hang around the pan. Brush melted butter to the phyllo sheet and sprinkle with bread crumbs and parsley. Repeat procedure until you use your 6 phyllo sheets. Add your vegetable egg mix to the pan and cover with with the phyllo sheets, brush again with butter. Sprinkle with parmesan cheese. Place on preheated oven 375F for 30 minutes or until golden brown. Take out of the oven and turn around in a plate, let rest it for 10 minutes before cutting it. Use a bread knife.
