¡¡¡Buenos días GENTE!!! hoy os queremos presentar un producto que se sale lo mires por donde lo mires, se trata de Cochinillo ya practicamente listo para consumir, tan solo hay que meterlo 12 minutos en el horno, o incluso se puede rematar en microondas. Por supuesto, nosotros lo hemos probado antes y es espectacular el sabor, su corteza crujiente, como en cualquier carta de los mejores restaurantes, sin tener que manchar, ni dedicar horas para conseguir un cochinillo perfecto. Nos viene de la mano de una empresaria Abulense, que solo trabaja con las mejores calidades de cochinillo (Porkyavila) y que tiene una mano en la cocina bárbara. The key to cooking a perfect roast is ALWAYS in your preparation... Pork is seemingly the most difficult to master, but not if you’re well equipped. 1. Get yourself a good roasting pan with a high inset so all the oven heat gets in and around your roast. 2. Pick a good cut! Remember, bigger roasts will need longer to bring to room temp, longer to cook and longer to rest. 3. Bring your pork out a few hours before preparing to cook to bring to room temperature, the absolute most important thing to do, the roast will cook evenly this way! 4. Most deboned pork roasts come pre-rolled, I cut mine off so I can do the following: pour boiling water over the rind to start the cooking process and ‘shock’ the fat modules, pat dry with paper towel, score rind thinly with super sharp knife, smother with good quality olive oil and then re-role and use twine to bind. 5. SALT! The BEST salt for pork with crispy crackling is a flaky sea salt. It has more surface to stick to the fat and absorb all that moisture to create the crispiest delight!! 5. Hot oven. First at 240 Celsius for around 20 minutes then drop to 190-200 for the remainder of the cook. 6. Rest!! The longer the better, usually it’s around half the time it’s been cooked for best results (but who can sit that long right!) . . . . . . #porky
