I’m calling these copycat sous vide egg cups a success, even though the texture wasn’t right. I think it’s because I heated it in the microwave. But the flavor is great, which is good, because I will be eating them for breakfast for the next 9 days. That gives me lots of opportunity to test different heating options.

First time trying my new sousvide. And definitely not the last time! I don't think I have ever been this satisfied with my own cooking! The bearnaise is make in the sousvide as well. Never more pounder sause! Første gang jeg prøver min nye souvide. Og bestemt ikke sidste gang! Tror aldrig før jeg har været så tilfreds med min egen madlaving. Bearnaisesaucen er også lavet I sousviden. Og kan lige så godt sige det med det samme! Kommer aldrig til at lave pulversovs igen! #sousvide 💪

Last night, we prepared a helluva steak, and this photo doesn't do it justice. It was a 30-day dry-aged ribeye from @localpigkc. We cooked it for 2.5 hours at 135 degrees in our @sousvidesupreme, then gave it a hard, high sear in a cast-iron skillet with brown butter. Just beneath that crust lies perfectly medium-rare pink.
