Horse food, and my food! 😊 I used to be on a Poor Rocket Diet (PRD) in an effort to keep my weight down, and give Rocket an easier time. I have now ratchet it up a notch to PhD level (Poor Horse Diet), to give Alarich or Titan or any of our school horses an easier time should I be assigned to them! I haven’t been very disciplined though, but I’ll get there! 💪🏼💪🏼💪🏼 And I’m off on this public holiday, to see the horsies! 😍 #spinach

My Chicken, spinach, mushroom & pea risotto. 💞 Cook onion and garlic in oil until translucent Add chicken and cook through, just until you can’t see any pink bits, don’t brown as it will cook further through the liquid. Add seasoning. Once chicken is cooked enough, add rice. Stir until the rice becomes somewhat translucent then slowly start adding stock. I usually use close to 2 ltrs of stock but it varies depending on how much rice. Start with 500ml of stock, bring it to the boil then lower to a simmer, once absorbed, start adding 250ml portions of stock at a time waiting until the stock reduces to add more, the repeat etc until all the last load of stock, Before you add that, put in your spinach, mushrooms and peas. Stir, add the rest of the stock and cook for a further 5 mins or so, until your veggies are cooked (I like my peas only slightly cooked so they pop on your mouth ☺️) Once it’s all cooked. Serve right away. You could add a of butter at he end to make it a little creamier if you like it like that. Also for different variations, try omitting the chicken and adding fresh king prawns. With this I would add the prawns in the last few stages of the cook after the rice. *also with the seasoning just add when you feel you need more through tasting as you go. #spinach #spinach
