Gochujang Braised Chicken Thigh, Kabocha Puree, Purple Nappa Cabbage Slaw, Daikon, Ginger Gel I saw this absolutely beautiful purple nappa cabbage slaw at the coop and immediately wanted to make something with it a bit ago. I decided to revisit the gochujang chicken that I loved so much form last year. I also decided to try roasting the cabbage after reading about it. The idea for the cabbage turned out to be a disaster, even though it was the component that I was most excited for. I put too much in the pan, and instead made steamed cabbage, and on top of that, the edges that actually crisped up the way that I had planned weren't even that good! They lost their color and while the thinnest parts were crispy, it was an inferior texture to just the fresh cabbage. After some thought I abandoned the roasted cabbage idea and settled for making a super simple sesame slaw with the shredded nappa, green onion, and sesame seeds. I braised the chicken thighs (froze the bones to make stock later) in a mix of onion, garlic, ginger, ogchjang, shoyu, mirin, and a bit of sugar. Once it was cooked through, I took the braising liquid out and reduced it until thick, while I put the chicken under the broiler to crisp the skin again. I basted the chicken with the reduced sauce until the sugars started to caramelize. For the puree, I diced the kabocha and steamed it, then blended with roasted garlic, and a touch of butter. I seasoned the puree just slightly with white pepper and salt to finish. For the daikon flowers, I cut slices of daikon as thinly as I could manage until they were basically see through. Then I cut to the centers and rolled them into cones, the water content was enough to hold them in place. I piped in some of the ginger gel that I had leftover from the carrot soup, then sprinkled them with chili flakes. Extremely pleased with how this dish turned out, even though my roasted cabbage failed.                #squash
