My snack earlier wasn’t a patch on the avocado toast @gailsbakery 🥑 I always feel bad about spending money on avocado toast when I’m out but when it tastes as good as this one I’d happily pay for it over and over again 🙌🏼 #vegan

Warming oatmeal bowl - topped with my fave home made quinoa granola (for that added crunch, SO good!!) raw honey & almond butter. For the Granola: 4 cups quinoa flakes 2 cups quick oats 1/2 cup coconut oil 1/2 cup maple syrup 4 Tbs grated orange rind (Mix & bake @ 350 for 20 min on non stick pan - stir half way through baking) Once cool add: 1 cup raw hemp seeds 1 cup coconut ribbons 1/2 cup chia seeds 1 tsp cinnamon 1/2 tsp nutmeg 1 cup of dried mulberries, goji berries, raisins or other fruit of choice. Place in air tight container ( I like a big jar) keeps for 1 month. . . . #vegan

Perfect Vegan Potato Scramble! Sooo good! One of our core 5 vegan breakfasts. #vegan Ingredients: 4 baked potatoes chopped, 2 bell peppers, 1 onion, 2 cloves of garlic, 1/2 pound chopped mushrooms, 4 cups spinach, 1 large tomato chopped, 1 avocado chopped, salt and pepper to taste. Sauté bell pepper, onion, garlic, mushrooms in veggie broth or water until soft. Top with fresh spinach and stir in until wilted, stir in potato until warm, turn off heat and top with avocado and fresh tomato. Season with salt and pepper to taste. Enjoy!
