How about a Holiday dessert that can also be a meal replacement. Huh WHAT? This Pumpkin Pudding will be our dessert on Thursday and it’s super healthy to be a meal replacement anytime you feel like making dessert your main course :) Serves 2 for dessert and 1 for main course (we’re serious about that idea!) INGREDIENTS 🎃 2 TBsp chia seeds 1/2 cup toasted coconut almond milk (or any plant milk) 1/2 cup pumpkin purée 1 TBsp @zenberrymix Vanilla Chai 1 medjool date pitted (omit if blood sugar issues) 1 tsp maple syrup or molasses (latter has B vitamins!!) (Optional) Dash of freshly grated nutmeg (Optional) vegan coconut whip cream (bought in health food store) DIRECTIONS In a small BOWL, soak@chia seeds and coconut milk for 5 min, stirring with a fork to evenly distributing. Put the pumpkin purée, Zenberry Vanilla Chai, date, sweetener in a blender. Top with the chia coconut mixture and blend for 2 min at high speed, creating a smooth, whipped mixture. The chia seeds and date should disappear into the purée. Divide into 2 dessert goblets or eat it all from a big bowl. Sprinkle a dash of freshly grated nutmeg and a little coconut whip cream to make this pudding very special! Even during Thanksgiving I keep focused on my health and fitness goals.
