Gaz Oakley of @avantgardenvegan brings a taste of France to his kitchen in South Wales, with his version of crème caramel. Crème caramel is a traditional French dessert custard topped with a soft caramel hat that melts into a rich, gelatinous custard base. It’s not to be confused with sister dessert, crème brûlée, which — while similar — is topped instead with a hard, candied shell formed from caramelized sugar. According to chef and food blogger Gaby, of @whatsgabycookin, these Thai-style, barbecue baby back ribs are “NOT to be missed!” Two hours in the oven, a toss in her Thai-fusion marinade, and a final few minutes to char on the grill and these ribs will have eaters licking their fingers after every bite. Gaby’s marinade incorporates ingredients that hit so many taste notes — sweet, sour, salty — even spicy. In traditional Thai cuisine, flavors of the dish are broken out into four categories: sour, sweet, spicy, and salty — and each is built from the pillars of at least two or three of these, sometimes all four! Today is — a day dedicated to promoting awareness of food waste, ways we can help those without access to proper nutrition, and reaching by 2030. According to the United Nations Food and Agriculture Organization, over 821 million people worldwide go hungry each day, with 1 in 3 suffering from malnutrition — hard to fathom when considering that over 1/3 of food is wasted, and 85% of this waste occurs in homes, restaurants, and stores. While these stats are alarming, the good news is that we can all make a difference. So what can you do? Donate your non-perishable food items, buy locally and only what you need for a few days at a time, support organizations fighting to end world hunger, and spread the message to inspire others to do the same. “Our actions are our future,” so let’s all do our part by joining the movement to achieve by 2030.
