Another successful day! For the in the smaller bottles, I brewed 5 bags of from @elmwoodinnfineteas overnight with , , and petals in 2 quarts of water. Then added the sugar (dissolved in 1 1/2 quarts water) and poured this into my 1 gal brewing jug. This was the first time I've been able to drink my kombucha before the F2 carbonating/flavoring stage. I added cranberries to some and blueberries to some others. Then I remembered I'd dried blossoms, so added some along with dried . An experiment. Still on the flower kick, I ravaged my pink & orange and threw in the violet leaves I'd picked earlier. Then I spotted the mint! I'm already drinking the blueberry. That Bourbon Black Tea has NO BOURBON, but does have flowers in it. The depth of flavor is amazing. You can get it online from @bourbonbarrelfoods and probably from Elmwood Inn Fine Teas. (Both are Kentucky Proud!) The Navy Orange uses regular black/green tea kombucha, but I added the zest of 1 naval orange, the flesh of 1 & 1/2 oranges, and about 1 T of kelp granules. It ends up tasting like orange soda.

When you visit a brewery, collect an inexpensive, copper tag stamped with the brewery's name & location. Each brewery has a metal charm representing it's unique style. The perfect accessory to ANY wardrobe ... or growler! I've done a couple events with Lori from and the experience is just pure fun! The weather's warmer now. Get out and explore! (There's even an app for that.) Ask your favorite brewery if they participate! Tell 'em to get on the TagaBrew Trail! ------------

Chocolate Ganache Cupcakes My family has SO MANY food sensitivities and allergies. Gluten-free, dairy-free, peanut/soy/guar gum(aka any legume), cane sugar/refined sugar, pre-diabetic, ugh. I could go on but the point is clear. REALLY hard to make a dessert everyone can have. The ganache recipe is from @thespruceeats -- Vegan Dairy-Free Chocolate Ganache. (I love and thank you Spruce Eats) I used dark chocolate chips from @enjoylifefoods because they only use chocolate and cane sugar. I'll take one for the team on the cane sugar. And I used Rice Dream for the not-milk because it's soy-free. The cake recipe is from glutenfreebaking.com -- Easy Gluten-Free Chocolate Cake Recipe. I used from @namastefoodsllc and subbed in coconut sugar and Rice Dream. I also added 2 packets of instant coffee to enhance the chocolatey goodness. After dipping in the ganache, I sprinkled chunky, green apple sugar on top. Then I added dried and ... THEN, I remembered it IS, in fact, SPRING and FRESH flowers are everywhere. But, it's a dark & stormy night. For all of you people out there, you CAN eat "real food" Keep trying, learning, and searching for great recipes. And when it gets to be too much, find a great gluten-free, dairy-free, nut-free bakery!

Don’t miss this beer festival! It’s in Elizabethtown, KY, about an hour outside Louisville. I had so much fun just volunteering last year I’ve already signed up again! . Such a friendly group here! And I met people who came from all over the states as well as quite a few Europeans. All ages. All kinds of people. Felt like a small town homecoming . . . with amazing KY craft beer!

Wild Violet Infusion . I liked the blue color in my yard violet infusion SO MUCH, I decided to add MORE violets and coffee-pot hot water to make even MORE wild violet syrup. . The left side shows the infusion of a half jar of violets covered with hot water after 3 hours. . The right side shows that same infusion moved to a 2 quart pitcher half full of violets with more hot water. This experiment sat out overnight then basked in the sun for another couple hours. . The colors are amazing. The urge to go pick more violets and make a blue simple syrup is taking hold. . I found a hillside full of , , and a couple trees in opposite the golf course adjacent to the fork in the road near the expressway. (Perhaps a treasure map is in order?) The through the hills also has a lot of worthy edibles. .

Wild Violet Vinegar (Pink) and Wild Violet Infusion (Blue) . For the vinegar, I stuffed an old vinegar bottle half full of wild violets and a few fancy pansies and violas with a nod to diversity. Then I filled the bottle with warmed white vinegar. After about 2 hours the deep purple color infused into the vinegar creating that stunning bright pink. . That beautiful blue is just hot water from the coffee maker over a half jar of violets. I’ll let that infuse overnight then make violet syrup tomorrow. . Now, I gotta find a recipe for dairy-free, cane-sugar free ice cream!

Salt Cured Egg Yolks . Getting ready for the @kyderbyfestival. I’m fortunate to have @bourbonbarrelfoods in my neighborhood. Really, we all do if you checkout their online store. . @misswondersmith posted some tasty looking salt cured egg yolks around St. Patrick’s Day. I used Bourbon Smoked Salt, Pepper, and Paprika in mine. Most recipes use a salt-sugar blend for curing. AND, you can get Bourbon Smoked Sugar in a couple flavors from Bourbon Barrel Foods. . Since this is my first attempt, I’m only making 6 if these friendly treats. On a whim, I sprinkled and dried dill on a couple yolks before covering everything in another layer of fine ground sea salt, smoked salt and smoked pepper. . @craftbourbonhorseskentucky@kyderbyfestival.@kytourism

Spring Pesto with Preserved Lemons . Nothing better than fresh pesto. Utilizing the first green plants of the season is an easy choice too. . I puréed preserved Meyer lemons and pepitos with yard-found Egyptian onion tops, garlic chives, and bittercress or land cress that popped up all over my garden this Spring. . Pesto is easy to make and goes with, in, and on anything. The instant flavor punch is perfect for a salad dressing or dip. Work it into root vegetables before roasting. Blanket a roast(beef, pork, turkey, or chicken) or vegetable steak(cauliflower, eggplant) then baste with the the pan drippings. Mix a tablespoon of pesto into rice, potato dishes, or stuffing. Scroll through and see what I did to frozen tilapia and potato salad. . Spring Pesto with Preserved Lemon . 2 C bittercress, leaves & flower stalks 1 C green onion 1/2 C garlic chives 1/3 C preserved lemon 1/2 to 1 C pumpkin seeds 1 tsp pink or white peppercorns 1 C extra virgin olive oil . 1. Rough chop all the greens and lemon. 2. Using a food processor or blender, blend everything but the oil into a thick paste, scraping down the sides as necessary. 3. When the paste is too thick to blend, start drizzling in the oil as you continue to purée the pesto. 4. Keep blending oil into the mixture until you have the thickness you want. . Add-Ins: Fresh or dried thyme, sumac, smoked paprika, cayenne or chipotle, cumin, basil, parsley. . Pictured are my backyard-garden-foraged bittercress, garlic chives, and Egyptian onion tops with a jar of preserved Meyer lemons, a small jar of this Spring Pesto with Lemons, and a big jar of Bittercress Spring Pesto(no lemons, add basil, coriander, and black peppercorns). . If you aren’t into or don’t have a , substitute green onion, fresh chives, and . I preserved Meyer lemons in salt about 3 weeks ago, but you could use any citrus zest & juice and add salt to taste. .

☆ New Review ☆ Had a GREAT night @four_pegs with @the_lot_lizard_king last Monday! The are so good, they don't even need the delis-cious . Many many many options on tap and bottled. options like El Chavo from @blakeshardciderco. GREAT hospitality! The bartenders and kitchen staff rock. The food is very, VERY good. In addition to the amazing main bar room with antique wooden back bar and service hutch, don't miss the open outdoor patio area, spacious upstairs, and small billiards area with and ! Go for dinner, stay for drinks, and have some fun! Lots of stuff going on like Monday night karaoke and Thursday open mic night.

☆ Mild Charred Pepper Sauce ☆ Before & after shot of my latest . I didn't expect it to look like mustard! It's tangy, fruity in a pepper sort of way, and has a delectable coriander finish. Ferment recipe in previous post. To finish into sauce, after fermenting, I blend everything in batches in the blender. Then thin it with apple cider vinegar and adjust sweetness with honey. The 2 large bottles are mellowing outside in the garage fridge. These fermented pepper sauces are great mixed with mayonnaise, cream cheese, sour cream, or tofu for spreads and dips. I also add to rice for some of the cooking liquid. And don't forget it makes wonderful, complex salad dressing mixed with oil and a little fruit juice.

*** Loaded Sweet Potatoes *** A lazy dinner that counts as a ! Also and really quick. . Bake sweet potatoes either in the oven or microwave. . Top with sautéed onions, bacon bits, toasted walnuts and pumpkin seeds. . Then top off with a sprinkling of chopped fresh green things. . I sautéed my onions & bacon then threw in a handful of pumpkin seeds and walnuts. I seasoned everything with orange zest, ginger, and harissa seasoning. . Today’s chosen green things are freshly yard-foraged garlic chives and what I hope is chickweed. I sprinkled my finely chopped yard herbs atop the loaded sweet potato then drizzled fermented pepper sauce on top. (Recipe in previous post.) .
