BLACK RICE SALAD What to serve with grilled tilapia and your favorite spicy craft beer? I gotcha covered. Although I wasn't thinking about packing in nutrition when I made this, it's really healthy. Great recipe to include for people with special diets -- gluten-free, dairy free, vegan, no refined sugar. Everyone can eat this and you food-limited guests won't feel left out. Don't think it's keto or low carb. (Cheat day?) Definitely roast the pumpkin seeds yourself in a dry pan over moderate heat. They smell amazing and the fresh roast gives an earthy pop of flavor. 1 C Black Rice, cooked & cooled 1 C Toasted Pepitos (shelled pumpkin seeds) 1 bunch Cilantro, coarsely chopped 1 bunch Green Onion, button sliced 1 C Roasted Red Peppers, diced 1/2 C Tomato, diced 1/4 C each Spearmint and Parsley, dried 1 Lime, juice & zest 2 Tbsp White or Pink Peppercorns, coarse ground 1/2 tsp Cayenne 1 Tbsp Honey 1/4 C Rice Wine Vinegar 1/4 C Avacado Oil Salt to taste 1. Whisk together the lime juice & zest, rice wine vinegar, oil, and coarse ground pepper to make a dressing. 2. Combine the black rice, pepitos, cilantro, green onion, roasted peppers and tomato in a large bowl. 3. Pour dressing over the rice mixture and thoroughly combine. 4. Add salt to taste. You can make this a day ahead and let the flavors meld in the fridge. I also added a 1/2 cup of my fermented green hot sauce. If you use bottled roasted red peppers, the brine can be used in place of the rice wine vinegar. Also, omit the honey if it's too sweet for you. Fermented Charred Shishito Peppers 2 C Shishito peppers, charred 2 small turmeric roots, sliced 1 tsp pink peppercorns 1 tsp coriander seeds 1 tsp galangal powder 1/8 tsp brown mustard seeds 5% picking brine (1 T salt per 1 C water) I charred the Shishito peppers over the open flame on a gas burner using tongs and a keen sense of self. Make your brine by disolving 3 tablespoons salt in 3 cups of water. Be sure all the salt dissolves. Into a wide mouthed quart jar, I added pink peppercorns, coriander seeds, brown mustard seeds and powdered galangal. (Fresh galangal would be better, but alas, it's winter in Kentucky.) Fill the jar by layering the peppers and sliced turmeric. Add enough brine to fill the jar and seal with a fermenting lid. Time for more #lactofermentation! Gotta #makeyourownfood now and again. I got these #lids for #fermentedfoods from Trellis + Co about 2 years ago. Then didn't try fermenting for a year and a half. I made #fermentedgreenbeans last summer and I loved it. They are fancy schmancy. Made out of surgical steel with a spring part that pushed the food down under the brine. Now that I know what I'm doing won't poison or kill me, I got silicon fermenting lid inserts to fit wide mouth canning jars off Amazon. If you want to start fermenting, try a sauerkraut or hot sauce recipe. You don't have to make 2 quarts at a time. Start small! Just #startfermenting!
#Repost@pascalbaudar (@get_repost) ・・・ Prickly Pears and Cherry Primitive Wine. We still had a lot of prickly pears on the property where I do my workshop. The cactus are there mostly for decoration but it seems that no one is using the pears. They're so delicious! I took a large bag home. Before picking them up, I use small hand broom and remove the needles by brushing them off. One of my favorite thing to do with them is a sort of primitive wine but I decided to go a bit further and instead of using water I decided to use organic cherry juice instead. It's super simple to make, I just clean the pears briefly then poke them with a knife 4-5 times. They are then placed in a one gallon jar and organic cherry juice is added. The juice didn't have that much sugar in it so I added some maples syrup. You want the liquid to taste too sweet to start with. Don't worry, the sugar isn't for you, it's for the yeast which will convert it into alcohol. There is no yeast to add, the wild yeast is present on the fruits, if you look closely there is a small white bloom composed of wax and wild yeast. Usually within 48 hours the fermentation will start. I don't juice the cactus pears, with this method it's easier and the liquid is less mucilaginous. The yeast will find it's way inside the pears and through osmosis, the flavors will go into the beverage. Factually, it works extremely well. In fact, once I did a full fermentation and at the end of the process, the inside of the fruits was pretty gone. I'll ferment this one until Saturday, so it's only one week of fermentation but it's enough to make it a drink with maybe 5% alcohol. I keep shaking the content twice a day (at least) and taste as I go along. I keep adding sugar or maple syrup if the liquid becomes too sour and before serving it, I'll taste it once more. I keep complete control of the flavors and sweetness that way. Done properly, it's quite delicious but with the cherry juice, this should be perfect as a drink pairing with the dessert (chocolate-based). At least this is what I tell myself. This has just a little kefir mixed in the chocolate that makes the chocolate extra creamy. So I always say, if you're gonna have sugar, have a cultured food with it. This way those little microbes can help consume some of the extra sugar and keep you in balance. Get the recipe!
